Joshua Allen is the founder of Mogwai Labs, an Australian company specialising in fresh liquid brewing yeast, fermentation solutions and microbial testing. A University of Wollongong Biological Sciences graduate, Joshua spent over a decade in medical research before moving into engineering and professional brewing. He co-founded Merchant Brewing Co. before establishing Mogwai Labs, combining scientific expertise with practical brewing experience to support Australian breweries with high-quality yeast and accessible laboratory services.

Good quality control isn’t just about finding contamination after something goes wrong. Regular microbial testing can help breweries understand their baseline microbiology, identify potential issues early and track changes over time. Plating and PCR provide different tools for investigating bacteria, wild yeast and other microorganisms that can affect beer quality.
